Fenugreek consists of hers of Trygonella Foerum Graecum L, of family Fabacceae. Fenugreek leaves contains ascorbic acid, β- carotene, fibres, galactomannan and calcium. Fenugreek also containsalkaloids like histadine, choline and amino acids like isoleucine, lipids, vitamins and fibres. Fenugreek leaves are antioxidant and also used in the prevention of artheroscelrosis by reducing cholesterol and triglycerides levels. The anti-inflammatory and anti-arthrirtis propertis of Fenugreek is due to the presence of lenolinic acid and linoleic acids.
